Cask vs Brewery Conditioned Beer

With cask conditioned beer, the secondary fermentation takes place in the cellar.

This happens when primary sugars, finings and dry hops are added. The beer needs careful control and positioning whilst the beer settles to a clear, soluble liquid.

With brewery conditioned beer, this secondary fermentation process happens before the barrel is filled at the brewery.
